Apple, Ham and Spinach Salad


Juice of a lemon (about 3 tablespoons)
½ tsp. Dijon mustard
½ tsp. salt
1 tsp. sugar
3 T. olive oil
1 large apple, diced
1 cup grapes, halved
1 cup sliced strawberries
1 medium carrot, grated
8 oz. diced low sodium ham
5 oz. baby spinach


¼ cup sliced almonds
¼ cup crumbled blue cheese


1. In a large bowl, whisk together the first 5 ingredients.

2. Add the next 6 ingredients to the bowl and toss with tongs until the fruit and vegetables are well coated with the dressing.

3. Divide the salad equally between 4 plates. If desired, top each salad with a tablespoon of nuts and/or cheese.
