2 T. vinegar
½ tsp. mustard
¼ c. olive oil
1 tsp. salt
1 tsp. sugar
1 c. dry whole wheat couscous, cooked according to instructions
1 sm. can of garbanzo beans (1 c.)
4 oz. feta cheese, crumbled
1 pickling cucumber, diced
1 cup diced tomatoes (1 large tomato)
¼ cup pitted kalamata olives, chopped
¼ cup chopped fresh mint
¼ cup chopped fresh parsley
1. Combine the first 5 ingredients in a medium bowl and whisk until well blended.
2. Add the remaining ingredients to the bowl and mix together.
