Sweet Potato Fries
Ingredients:
3 medium-sized sweet potatoes
2 T. olive oil
Salt
Directions:
1. Preheat the oven to 400°.
2. Wash the sweet potatoes.
3. Cut the potatoes: cut in half lengthwise, lay the cut side down and cut each half into 4-5 wedges.
4. Put the potatoes in a bowl, add the oil san sprinkle with salt. Toss to coat all the wedges with oil.
5. Place on a sheet pan with spread out into a single layer. Put the pan in the oven and cook for 10 minutes. Turn the wedges over and continue to cook another 5-8 minutes until the potatoes are browned and tender.
Creamy Herb Dressing
Ingredients:
¾ cup buttermilk
cup light mayo
1T. + 2 tsp. vinegar
½ tsp. salt
¼ tsp. pepper
2 green onion, cut into chunks
½ cup parsley leaves*
1 clove garlic
Directions:
1. Put all the ingredients into the blender and blend until smooth.
*You can replace 2 T. of the parsley with a fresh herb of your choice such as dill, tarragon, mint or cilantro.
